How often do reach the end of your day and realize you have no idea what to make for dinner? All the kids start popping in, one by one, asking that dreading question, " What's for dinner?" If you're like me, it happens more often than you would like to admit. Here is a quick tip to help remedy that situation in a hurry.
I frequently brown off (cook) extra meat (usually venison in our home) on less busy days like the weekends. I add in some Mexican seasoning during the cooking process. After the cooked meat has cooled, I put it in a small container or plastic closeable bag (that fits about a pound), cover and freeze. I try to make several of these at a time.
Then on those harried nights, you can pull a portion out of your freezer. Warm up the meat and use as you would normally. Think- burritos, tacos, enchiladas or tostados. No hard decisions about dinner and you saved a good 15 minutes in prep time. You can do this with chicken, beef or pork (or venison) and "put it up" until you need it.
